Cheese and Prosciutto Wrapped Asparagus
- 1 bunch asparagus
- 5 slices any cheese
- 5-10 slices Prosciutto
- Salt + Pepper to taste
Preheat oven 400 degrees.
Prepare asparagus by washing and snapping off the dry stems. Blanche asparagus for 1-2 minutes in boiling water. Drop in an ice bath to stop the cooking process. Pat dry and distribute an even amount of asparagus into five bundles. Alternate the direction of the asparagus by having some pointing up and some pointing down. Wrap the asparagus in the cheese. Then wrap in prosciutto. If your prosciutto is cut super thin, you may have to wrap the bundle in two pieces. Place the bundles on heavy baking sheet.
Drizzle the finished bundles with olive oil and add salt and pepper and bake for 5-10 minutes. Watch for the cheese to melt and bubble. Once melted, the asparagus should be ready.
