Brace yourself, because this is going to be fabulous!! You can use black or red caviar for this recipe... if you want to keep it authentic to the Russian version. If you don't like caviar, making this appetizer without it is also delicious!
I typically prepare my blini just by using any pancake mix and making the pancakes small and thin. I have also recently used a mix from Whole Foods which used gluten free pancake mix which I coupled with almond milk. It turned out great as well... for the gluten free folks. You can make the pancakes ahead of time and refrigerate until you are ready for assembly. If you like, take them out 1/2 hour before assembly, so they are more room temperature. You do not want them hot.
Assemble the appetizer by arranging the blini on a plate and place a folded piece of salmon on top, followed by sour cream and caviar. Top with chives and you are ready to serve.
Serve vodka in frozen shot glasses (optional) and you will have the perfect little appetizer!
