Red White and Blue Berry Cake
- 3 tiers of cakes
- 16 oz cream cheese (two boxes)
- 1 cup powdered sugar
- 1 Tbs vanilla
- 2 cups blueberries
- 1 cup raspberries
- 2-3 pounds fresh cherries
Prepare your 3 tiers of cakes or purchase them from a local bakery.
Prepare your icing by beating the cream cheese at medium speed with an electric mixer until creamy; gradually add sugar and vanilla, beating well.
Cut each tier in half, lengthwise and start icing each layer. Repeat with the medium tier, and then the smallest tier. You should have six layers total with each tier cut in half and iced.
Once the cakes are fully iced, it's time to decorate. You can follow my decorating example, by decorating with blueberries and cherries on the bottom tiers. Then using blueberries and alternating cherries and raspberries on the middle tier. And finally, creating a blueberry border and stacking with raspberries and cherries on top.
