Cheesy Basil Pesto on Ciabatta Bread
- 3 cups fresh basil leaves
- 4 garlic gloves
- 4 tbsp pine nuts (optional)
- 1/2 cup olive oil
- 3 tbsp freshly grated Romano cheese
- 3 tbsp freshly grated Jarlsberg cheese (semi-soft)
- 1 tsp lime juice
- salt & pepper to taste
- ciabatta bread
To create the pesto, combine basil, garlic, pine nuts, salt, pepper, and a portion of olive oil in food processor and process until smooth. If you like the pesto to be a certain consistency, pour the olive oil in slowly until the desired consistency is reached. Remove the pesto from the food processor and empty into a bowl. Fold in the grated cheeses and season with additional salt and pepper if necessary.
To serve, spread the pesto on fresh ciabatta bread, then top off with a slice of cherry tomato and grated Romano cheese.
