Minty Peach Bellini


  • 1 bottle Peach nectar or juice
  • 1 bottle Champagne or sparking wine
  • 1/2 cup fresh mint
  • blackberries and mint for garnish


Mull the mint in a cup. Make sure to use the leaves AND stems for the mulling process. You do not have to use sugar or simple syrup for mulling, just the mint leaves. To mull, press the spoon against the mint and grind it to release the juice from the stems and the oils from the leaves. Do this for about one minute and you will smell the mint juices strongly.

Pour the peach nectar or juice into the cup with the mulled mint. Make sure the peach nectar is well refrigerated. Let it sit for about 15 minutes absorbing the mint juices.

Strain the mint out of the peach juice. Pour one half of the peach juice in a champagne glass (you can also use a wine glass or a tall glass) and add champagne as desired. The best combination is one part champagne and one part mint peach juice.

Use a mint leaf and any fruit as garnish and enjoy!
