Quick Marinated Feta
In the traditional recipes, marinated feta took up to a week to make. This version is super quick and makes the perfect addition to any appetizer table
- 1 pkg Block of Feta Cheese
- 1 cup Olive Oil
- 1/4 cup chopped fresh herbs. Use one or a mixture of your favorites
- 3 cloves garlic
- Salt and Pepper to taste
Soak garlic in lemon juice 24 hours prior to preparing the feta. In a small bowl, combine fresh herbs, chopped garlic, and olive oil. Mix all ingredients. Open the block of feta cheese and cut it up into small cubes. Place the feta cheese in a container and pour the olive oil mixture all over the feta. Make sure that it is covering all the feta. Let sit in the refrigerator for 30 minutes to an hour. Take out of refrigerator and have it sit at room temperature for 30 minutes! You can salt and pepper the feta to your liking. However, the feta is typically very salty, so it may not even need the additional salt.
Pour into a martini glass and serve on a platter filled with marinated olives, pita bread and chips.
